Homemade apricot peach chutney

To me, spices and fruit are what make the world go round.  I loooooooovvvvvvve chutney, and apricots and peaches are my favorite fruits.  I made a huge batch of this delicious mush for my engagement party.

I don't really have a recipe for chutney, but throw these things in a pot to cook and it will be fab:

  • About 6 pitted and cubed fresh apricots
  • About 2 large pitted and cubed fresh peaches
  • 1/2 cup brown sugar (light or dark, whatever you have will work)
  • 1/2 cup chopped onion (red is best for chutney, but any onion will be fine)
  • 1/3 cup cider vinegar
  • 2 tablespoons honey
  • 1 spicy chile pepper (I like serrano peppers)
  • 1/2 teaspoon salt
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin (I ALWAYS go for freshly ground cumin)
  • 1/2 teaspoon pepper  

My dog was watching me the whole time!  She loves fruit as much as I do. :)

Cook over medium low heat, stirring occasionally until all of the goodies cook down together (about 15-20 mins).  Your chutney should be like a thick chunky jam.  Take off the heat and let cool.  Put into mason jars and store in your fridge for about a week.
