The Pineapple Rhubarbarian

This is a little boozy drink that I made up a few weeks ago with some homemade goodies that I like to call, "The Pineapple Rhubarbarian."  A super strong and fruity kick your ass kind of drink that tastes like pineapple juice. (YES please!)
There are a few things that need to be made before making this drink:
1. Homemade pineapple rhubarb caribbean rum.  I blogged this recipe for this infused rum on my old blog here.  This stuff was SO damn tasty. 
2. Honey pineapple rhubarb popsicle cubes.  I made these out of the leftover popsicle juice from my recipe found here.  These are great little popsicle cubes that I've been adding to soda water for a tasty little healthy soda.

That's it!  Just a popsicle cube and rum!


Doesn't look like much, but that is ALL rum!  Be careful here friends.  This stuff takes a little bit of work, and is a bit on the pulpy side, but it's a really tasty, summery alternative to your usual cocktail.  ENJOY!
