OK........ I tried this DRY brand soda the other day, and it was cucumber flavored. I was skeptical at first but....
IT WAS DIVINE!
In other words...... I loved it. I HAD to make some of my own. I've been feeling a little down after spending this past weekend in Idaho, with really beautiful sunshine, and coming home to gray Seattle skies. The temperature is pretty grand around here, but man, I NEED that sunshine! I actually felt a raindrop while walking Tootsie Pop. This summery soda was my attempt to cheer myself up.
This was so easy and delightful.
Just muddle about 5 or 6 thick slices of cucumber, a few torn mint leaves, and about a teaspoon of sugar in a 12oz glass. Fill with soda water and garnish with cucumber and mint. That's it! It is super super pulpy, so I actually ended up straining it after taking this pic. SO tasty though.....
Well........ it was a peek into the summer taste I was craving. Fingers crossed that we get some sun rays this weekend.
